The Chef Behind the Passion

Davide Bonato began his career at 16 in London, later honing his skills in high-end restaurants across Italy, the UK, and Japan. With over 25 years of international experience, he arrived in Madrid in 2015 to open Gioia. His cooking is a constant dialogue between tradition and innovation, where essential tastes of the past are reborn without losing their soul. The restaurant’s icon is the truffle — a jewel of the earth that symbolises sustainability and biodiversity, appearing in many of his creations.

The Tasting Experience

The menu offers several ways to explore Bonato’s Italian cuisine. The Nesso tasting menu (the name means “the link that gives origin”) is a curated journey through his most personal dishes. For a lighter midday option, the Tre Volte Gioia executive menu (available Wednesday to Friday lunch) presents a three-course sequence: a traditional Piedmontese vitello tonnato, a choice between Carbonara by Davide Bonato or layered pasta with braised meat and morels, and a house tiramisù. Each bite is a small revelation — joyful, precise, and deeply Italian.
