The story
Pacto Raíz is the story of four people who, after working together for years, decided to plant something of their own. The name itself speaks to that commitment: a pact rooted in the bonds they had already built. “Esta vez juntos desde el inicio,” they say — this time together from the start.
The restaurant, located on Calle Espartinas in Madrid’s 28001 district, is a personal and collaborative project. The team’s vision is to represent the spirit of Spanish tascas, market stalls, and home-style cooks — both Spanish and Latin American — letting those traditions speak through their hands.
Pacto Raíz describes its food as an expression of flavours you might have discovered in a Peruvian market, at Casa Pepe in a Spanish neighbourhood, at a street-food stall in Mexico, or in your own grandmother’s kitchen. The cooking is contemporary and fusion in style, but the soul is rooted in memory and place.
The team wants guests to recognise tastes they’ve encountered before, reimagined through their shared experience. It’s cooking that feels both familiar and fresh — a conversation between continents on a single plate.
