The story
On Calle Trafalgar, in the lively Chamberí neighbourhood, Sisapo brings a fresh, irreverent energy to Madrid’s dining scene. The name itself is a nod to an ancient Roman settlement called La Bienvenida — “the welcome” — and that spirit of hospitality runs through every corner of the place.
The restaurant was founded by three young friends with a shared passion for gastronomy. They wanted to create something bold, unpretentious, and full of life. The interior, designed by local talents, mixes industrial elements with vintage and decadent touches, creating an atmosphere that feels both curious and intimate.
At the stove is chef Alejandro Aguirre, whose background in haute cuisine and wide-ranging experience shapes the kitchen’s direction.
