Since opening in January 2012, Surtopía has been a steady presence in Madrid’s dining scene, offering a focused, personal take on Andalusian cuisine. Chef Jose Calleja, a native of Sanlúcar de Barrameda now based in the capital for over 25 years, runs the kitchen with a clear philosophy: let the ingredients of his homeland speak. The restaurant’s name itself hints at a place where the south of Spain is reimagined — a small piece of Andalusia in the heart of the city.
Rather than chasing trends, Calleja builds his menu around direct sourcing from Andalusian producers. Fish and shellfish arrive from the docks of Cádiz and Almería; meats and Iberian products from the pastures of Huelva and Córdoba; cheeses from the Sierra de Grazalema; olive oils and olives from Seville and Jaén. Even the desserts reference Granada, with a dish made using local piononos. The wine list follows a similar logic, highlighting Jerez’s fortified wines, still wines from native Palomino and Tintilla de Rota grapes, and a curated selection of small-producer Champagnes.
The best way to experience Surtopía is through one of its tasting menus, which change with the seasons and the market. A five-course option is complemented by cheese and wine pairings — a format that allows the kitchen to tell its story plate by plate. The restaurant also offers a bar for lighter bites, while the main dining room is reserved for full meals at lunch and dinner.
The atmosphere at Surtopía is welcoming and unpretentious, rooted in the convivial spirit of Andalusian taverns. Calleja and his team aim to replicate the feeling of eating in Sanlúcar’s Bajo de Guía or Plaza del Cabildo — though, as they note wryly, they can’t fully transport you there. Still, with a Michelin Recommended recognition for 2026, the restaurant’s consistent quality and genuine sense of place have earned it a loyal following.
