The restaurant’s seasonal menu changes with the market, offering a three-course formula (starter, main, dessert) for a fixed price that reflects the Bib Gourmand ethos of well-executed cooking without the formal price tag.
The cooking here is precise and ingredient-led. Starters might include a Roasted Tomato Salad with pressed watermelon, feta, and cucumber, or Green Beans a la minute with stracciatella, cherries, and pistachios. A “Ciao Madrid” Caponata arrives with crispy wafers and citrus sorbet.
