The story
Varra, on Calle Hermosilla in Madrid’s Salamanca neighbourhood, is built around a simple idea: “cocinamos el tiempo” – we cook time. The restaurant’s own words describe itself as a space that transcends eras and trends, reinterpreting the essence of Spanish cuisine. Here, tradition is always the starting point, and seasonal produce is the true star.
The menu at Varra is based on absolute respect for the product and its seasonality. Each dish is a conversation between what Spanish cooking was and what it is today, prepared with the time it deserves. The result is contemporary cooking that feels grounded, not gimmicky.
Varra’s approach has earned it a Michelin Bib Gourmand, an award for good quality, good value cooking. The restaurant also appears in the Guía Repsol and was named Top 10 Rookie by Macarfi, marking it as one of the most promising openings in Madrid in recent years.
The restaurant serves lunch and dinner daily, with a non-stop kitchen on Fridays, Saturdays and Sundays at its Varra Fina counter. Outdoor seating and counter dining are available, making it a flexible spot for both a quick meal and a leisurely evening.
