The story
At Frases in Murcia, the kitchen speaks a language of its own. Chef Marco Antonio Iniesta Nicolás and sommelier María Egea, who also directs the dining room, opened the restaurant in 2018 with a clear idea: cooking is a composition of phrases, and each plate is a sentence that tells a story about the land, the season, and the memories that flavour them.
The team describes their work as "cocina de recuerdo y memoria" – a kitchen built on recollection and emotion. The dishes draw deeply from the surrounding territory, using local ingredients to evoke smells and tastes that feel familiar yet fresh. It is a personal, rooted approach to modern cuisine that earned Frases a Michelin star in 2026, a recognition that fits naturally with the precision and intention on every plate.
The experience is built around two tasting menus. The longer "Menú Tierra" includes a sequence of small bites and larger courses such as a creamy Carnaroli rice with Galician clam and market vegetables, Red Shrimp from Águilas with a sauce made from its own heads and saffron, a reinterpretation of "Cocido", and Murcian Chato pork with a mushroom duxelle. Dessert is a roasted chocolate paired with charcoal-smoked milk ice cream, caramelised pine nuts, rosemary gelatine, and carob. A shorter "Menú Origen" shares many of the same dishes, both available with optional wine pairings and house-made sourdough bread with olive oil and butter.
The dining room is divided into two zones – table seating in the main salon and high stools at the bar – and the atmosphere is kept calm and focused. Frases is a place where the food does the talking, quietly and with conviction, leaving a lasting impression that is both of the moment and of memory.
