Step off Enköping's pedestrian shopping street and through the door of Bistrot Bombance, and the shift is immediate. Red-checked napkins, paintings hung at slight angles, an open kitchen where the cook moves easily between pots and the pass — the atmosphere is that of a well-worn French bistro, and that is entirely by design.

Behind the restaurant are Johan Beckman and Britt-Marie Edström, a couple who spent two decades running restaurants in France — at Le Brevent in Chamonix and Le France in Fayence — before returning to Sweden and opening this 32-seat room with a small bar. They know how a French menu is written because they have been writing them for years.

The Kitchen and the Chalkboard

The menu changes with what is available, announced on a slate board that might offer gratinéed snails alongside moules and scallops on any given evening. The French cooking here is confident and unfussy. A slice of baked celeriac dressed with anchovy-rich anchoïade makes for a precise, satisfying start. Fennel-spiced pork belly arrives with apple and mushroom sauté, crisp chard and a deep red-wine jus. A plate of French cheeses competes with a chocolate fondant for the final course — a rivalry with no bad outcome.

The wine list is entirely French, as one would expect from people who lived there for twenty years.

White Guide has awarded Bistrot Bombance its Fine level distinction, describing the experience as "a charming, pleasantly chaotic French bistro" — a place where the cooking is serious without the room ever feeling stiff. Stepping across the threshold into Bombance offers a welcome contrast. From a typical pedestrian street in an archetypal Swedish small town, straight into a charmingly cluttered French bistro. The paintings hang slightly askew, the waitress folds red-checkered napkins, and in the open kitchen at the far end, the chef moves deftly between the pots and the serving hatch. His name is Johan Beckman, and he runs the establishment with his wife, Britt-Marie Edström. After twenty years as restaurateurs in Chamonix and Fayence, they know exactly how to craft a French menu. The chalkboard features gratinated snails alongside mussels and scallops. Yet we are drawn to the baked celeriac. A tender slice of celeriac dressed in anchovy-laden anchoïade makes for a flawless start. The fennel-spiced pork cheek that follows is accompanied by a sauté of apples and mushrooms, crisp chard, and a rich red wine sauce. One might well opt for the platter of French cheeses next, but the chocolate fondant is simply irresistible. The wine list is entirely French. Mais bien sûr!
