JORD draws from the Nordic landscape, working with fish and shellfish from cold waters, game from northern forests, and root vegetables, herbs, and berries that follow the seasons. JORD offers three distinct dining formats, each designed for a different kind of evening. The Spontankvällen is for those who want to drop in on short notice—a glass of wine, a few dishes, and two hours of spontaneous pleasure. The Halvkväll is a more composed affair: five servings with a focus on seasonality, sustainability, and clean taste. Guests can extend the evening with an extra cheese course or dessert.
For those seeking a deeper journey, the Helkväll is a full evening of at least twelve servings. This is a culinary exploration through the Nordic seasons, moving from subtle beginnings to a lingering finish. The menu balances the raw and the refined, the delicate and the powerful. A wine pairing is available, curated by the sommelier to complement each course.
JORD’s connection to the land goes beyond the restaurant itself. The team operates a self-sufficient estate at Kuseboholm, where they hunt, fish, and grow their own produce. There, the experience grows directly from the soil beneath your feet. They also run a hunting lodge at Pukhult by Lake Ruggen, celebrating Swedish wilderness cuisine with themed evenings that honor the region of Östergötland.
