The story

Fågelboet in Sälen: Historic Timber Dining & Regional Swedish Cuisine

A Seventeenth Century Timber Foundation

Fågelboet in Sälen anchors its regional Swedish cooking inside a genuine timber cabin dating back to the 1600s. Visitors navigate high wooden thresholds before settling near a heavy stone fireplace that warms the dining space. This historic setting earned a White Guide recommendation for 2026, recognizing how the architecture shapes the daily rhythm of meals.

Local Ingredients and Slow Cooking

Jonde Thorén manages the kitchen alongside his wife Eva, focusing on produce sourced directly from Dalarna. Evening service centers around a specialized buljongfondue where diners select reindeer, moose, or beef fillet to cook in a rich broth. These preparation methods preserve the natural flavors typical of regional cuisine rather than masking them with heavy sauces.

The Waffle Tradition and Berry Desserts

The breakfast counter operates as a dedicated waffle house serving fresh batter throughout the day. Guests order individual hearts topped with cloudberry, raspberry, or blackberry, while lunch visitors often pair the plates with cured bacon from Siljan. Evenings conclude with a light cloudberry parfait that balances tart fruit against sweet cream, defining the approach to Swedish cuisine at the table.

Opposite the hills of Sälfjällstorget stands a charming 17th-century timber cottage that now serves as a waffle house and restaurant. "Mind your step," warns the waitress, as the thresholds are high. Sit close to the crackling fireplace if you're cold. Cloudberries, raspberries, blackberries, strawberries, blueberries, and queen marmalade – those who can't decide can have a different flavor on each heart-shaped waffle, says Jonde Thorén, who runs the establishment with his wife, Eva. The locally made goulash is delicious. So is the lunch waffle topped with bacon from Siljan's charcuterie. If you want to really treat yourself, you can even get one with Russian caviar. In the evenings, they serve specialties such as broth fondue with reindeer, moose, or beef fillet from Dalarna. Vegetarian options are available as well. Perhaps a cloudberry parfait for dessert? The wine list is small, but there’s something to suit every palate. Fågelboet is cozy, comfortably furnished, and unpretentious, with friendly staff.
