The story
Dashi is the foundation of Japanese cooking, and at this Stockholm restaurant, it is both namesake and guiding principle. Harry and Nathan, the duo behind Dashi, describe it as “the mother of all sauces and marinades – clean, smokey and rich with umami.” Their restaurant is a celebration of Japanese food culture, heritage, and lifestyle, offering a lively, unique, and carefully curated dining experience. Every detail, from the ingredients to the service, reflects a deep respect for tradition.
The Osusume tasting menu (1295 SEK) is the kitchen’s recommended journey through Japanese cuisine. It highlights dry-aged fish, seasonal meats, and produce, prepared with precision. The menu can be adapted for pescatarian guests. A sake pairing (995 SEK) complements the meal, drawing from a carefully curated sake list that spans a broad range of styles – a testament to Dashi’s notable sake program. Wine is also available by the glass or bottle.
Dashi is a small venue with only 16 seats per seating, offering two seatings Wednesday through Saturday (17.30 and 20.30). The counter is the heart of the restaurant, where guests can watch the chefs at work. For a more private experience, two high tables for two are available. A round table seating four or five offers a view into the kitchen. All seats are bar stools except the round table. The restaurant operates a banquet service, meaning all guests are served simultaneously, creating a shared rhythm to the evening. The space is focused and quiet – no children or pets, and guests are asked to avoid strong perfumes to preserve the dining atmosphere. (The washroom is downstairs via a steep staircase; the team is happy to assist if needed.)
In 2026, Dashi received a Michelin star for high-quality cooking, a well-earned recognition of its dedication to authentic Japanese flavors and meticulous craftsmanship. The award underscores the restaurant’s commitment to excellence in every aspect of the dining experience.
