Designed by Ferdinand Boberg and completed in 1914, Bjertorp Slott rises from the flat plains of Västgötaslätten with the kind of architectural confidence that makes it easy to drive straight past the entrance in disbelief. Swedish Cuisine Rooted in the Region

The kitchen leans into its Swedish identity with conviction. A lunch menu might bring salmon with broccoli sauce, or a prawn open sandwich stacked with pickled onion, bleak roe and a mountain of shellfish — straightforward in concept, precise in execution. Come evening, tasting menus of four to eight courses set the pace. Dishes such as charred wild garlic over potato foam with toasted rye bread, delicate cod with sea buckthorn sauce and carrot purée, and a generous elk rump with Pommes Anna, celeriac purée and small beetroot cubes show a kitchen comfortable working with both land and sea. Wine pairings are carefully chosen — a 2019 Terre Magre Ribolla Gialla from Italy was singled out as a particularly fine match for the fish course. It’s almost easy to miss the entrance to this magnificent castle, even though it sits right in the middle of the Västergötland plain. Ferdinand Boberg was commissioned to design the substantial stone structure, which was completed in 1914. To mark the occasion, we enjoy a Bjertorp Anniversary Ale brewed a century later by the local establishment Qvänum Mat och Malt. It pairs beautifully with the lunchtime salmon served with broccoli sauce from the lounge menu. The prawn sandwich features pickled onions, vendace roe, and a towering mound of shellfish—just like the castle itself, absolutely grand! Later in the afternoon, couples begin to arrive, eager for afternoon tea and relaxation, before capping off their visit with a hearty meal in one of the dining rooms. Tasting menus ranging from four to eight courses are available, featuring perfectly portioned dishes paired with carefully selected wines. We begin with smoked wild garlic atop a light potato foam, resting on a bed of toasted rye bread. Mild cod is served with a sea buckthorn sauce and carrot purée. An exciting 2019 Terre Magre Ribolla Gialla from Italy elevates the dish. The French-style moose dish is accompanied by Pommes Anna, celery root purée, and small cubes of beetroot. The portion size is as lofty as the ceilings—truly generous. The service team enhances the ambiance further with cheerful demeanors, wonderful attitudes, and thoughtful generosity. For those still going strong after nearly a full day of dining, lingering at the bar offers expertly crafted cocktails, a selection of Qvänum craft beers, and a concise yet carefully curated wine list by the glass.
