In the Swiss Alp Resort in Grindelwald, the restaurant Schmitte occupies a space with a fitting history: where iron was once forged, Chef Adrian Bolsmann now creates flavor. The name, meaning "smithy," hints at the transformation from raw material to refined craft.
The dining experience is built around a single, carefully composed Signature Menu (CHF 140 per person), available Wednesday through Sunday from 18:00. Each of the seven courses reflects the chef's philosophy: seasonality and respect for regional producers. The menu changes with what the land and local suppliers offer, allowing Bolsmann to reinterpret classic flavors in ways that feel both familiar and surprising.
The kitchen is driven by Chef Adrian Bolsmann, whose "unmistakable handwriting" is evident in every plate. His style is refined and harmonious, drawing inspiration from the surrounding nature.
