The story
L’Escarbot in Le Landeron serves Portuguese inspired Swiss cuisine that reflects over twenty years of chef Luis Vieira’s dedication to the region. He completed his culinary foundation in Portuguese Pousadas before working across Geneva palaces and settling among the Jura foothills. The kitchen sources vegetables and edible flowers from a garden located directly behind the building. Beef arrives from the nearby Chasseral pastures through a trusted local butcher who maintains strict pasture standards.
The monthly surprise menus showcase Lusitanian influenced Swiss cooking through a careful balance of overseas training and local terroir. Recent tastings have featured six week bone aged Simmenthal beef paired with pan fried duck liver and a port and black garlic reduction. A separate course highlights perfectly grilled langoustines served alongside citrus fruits and floral garnishes. This disciplined approach recently earned the kitchen a fourteen rating from Gault&Millau.
Guests dine inside a fifteenth century structure situated in the medieval old town near the lakeshore. Exposed stone walls frame dining areas that shift toward a shaded terrace during summer months. The beverage program focuses heavily on Entre-deux-Lacs producers, maintaining partnerships with seventeen local winemakers alongside select international bottles. Every pour aligns with the restrained pacing of the kitchen.
