The story
In Lucerne’s Burgerstrasse, de MATOS brings together two distinct culinary worlds. The kitchen, led by chef Oscar de Matos, blends Japanese influences with his Spanish roots. The result is food described by the team as “extraordinary, but uncomplicated, with a pinch of punk.”
Seasonality drives the menu. Dishes change with the seasons and rely on a deep larder of fermented products. The restaurant’s tagline — “Contemporary food, ancient methods” — hints at a kitchen that looks backward for technique while pushing forward in flavour.
Oscar de Matos and Nadine Baumgartner are the duo behind the project. Their partnership spans 15 years and began at Lucerne’s “Maihöfli,” where they earned 16 GaultMillau points and a Michelin star for their unconventional cooking. After leaving Lucerne for pop-ups, stints in Zurich, and even a garden Tavolata, they have returned to the city with a new concept at de MATOS.
The restaurant holds a Michelin star, awarded for high-quality cooking that is both precise and personal. The dining room is complemented by a Café and Wine Bar, open for lunch and early evening, offering a more relaxed entry into the de MATOS style.
