The story
Equo 1706 is the fine dining restaurant of Hotel Rössli in the lakeside village of Weggis, just outside Luzern. Here, chef Matthias Gäth and his team craft a modern, seasonal cuisine that balances tradition with innovation – a style that has earned the restaurant a Michelin Recommendation and a strong rating in Gault Millau.
Gäth discovered his passion for cooking as a child in northern Germany. His journeyman years took him through some of Switzerland’s most renowned hotels and restaurants, including the Gasthaus Löwen in Menzingen and the Ecco at the 5-star Hotel Giardino in Ascona under chef Rolf Fliegauf. Since March 2019, he has been the head chef at Equo 1706, where his cooking is described as creative, modern, and grounded – a harmonious blend of innovative ideas, handcrafted perfection, and respect for high-quality products.
The kitchen works with fresh, seasonal, and regional ingredients, sourcing sustainably wherever possible. The wine list mirrors this philosophy, with organic wines from Delinat. The result is a cuisine that is both refined and honest, presented in a stylish, welcoming atmosphere.
Dinner is served Thursday through Monday, with the kitchen open until 21:30. The attentive service and elegant setting complete the experience, making Equo 1706 a destination for those seeking exceptional modern cuisine in the Luzern region.
