At Hyg Weggis, Chef Felix Kattchin fuses Nordic sensibility with Mediterranean warmth and local Swiss ingredients. The kitchen, led by Kattchin after his recruitment from the Park Hotel Vitznau, centers on fire and grill techniques that define this award-winning spot on the shores of Lake Lucerne. "Rauch muss sein," Kattchin declares, driving a menu where almost everything passes through the grill. This philosophy shines in the "5 Plates" sharing format, which allows guests to sample a range of bold flavors without excess. The kitchen starts service with a flatbread marked by Sbrinz cream and herb salad, followed by inventive twists on classics like vitello tonnato using pink-cooked veal and smoked trout instead of tuna. Large-format meats feature prominently too; tomahawk and porterhouse steaks weighing 900 grams each are announced on slate boards, while special cuts like bavette flank steak from Swiss Black Angus undergo a precise routine of sous vide cooking in their own fat before finishing over high heat.
Freshwater and marine offerings reflect the region's proximity to water and international sourcing. Felchen whitefish from Lake Zug arrives prepared in nut butter with a kimchi beurre blanc, paired alongside kohlrabi maluns stuffed with pearl barley. The seafood selection extends to hamachi from Kagoshima treated with ikejime technique and served with smoked buttermilk and seabuckthorn, as well as organic salmon accompanied by green tomato and leche de tigre. Vegetable plates also receive attention, such as a bernrose tomato garnished with olive cream, spring onions, and shiso leaves.
Owners Valentina Denz and Lukas Kroesen founded the venue to create a place for good living, drawing on the Danish concept of hygge to foster relaxed gatherings. The space accommodates both indoor lounges and a summer terrace pop-up called Dock & Ducks right by the water. Sommelier Lukas curates a wine list reaching up to 500 selections, ranging from rare unicorn wines to accessible daily bottles, ensuring strong pairings for the grilled specialties. The team emphasizes collaboration and joy behind the scenes, aiming to deliver fresh dishes with light profiles and bright colors throughout the restaurant's run until late September 2026.
