The restaurant operates under the Verein Sonnenberg association, which has run the venue as a professional training project since two thousand and seven. The evening menu shifts focus toward seasonal proteins and precise seasoning. Luca Haase layers calf sweetbread with South American black truffle, spinach, and wild mushrooms for a deeply savory course.
