Chef Santi Wongsawat, a Samui native, grew up helping his mother in her food business, absorbing the island’s culinary traditions. At Phensiri, he focuses on using only what nature provides fresh each day – locally grown produce, seafood from the surrounding archipelago, and coconuts from the island. The kitchen avoids industrial palm oil, opting instead for coconut oil or animal fats. This approach means dishes vary subtly with the seasons, requiring deep knowledge and experience to maintain consistency.
