The story
In the Teşvikiye neighbourhood of Şişli, SADE “Beş Denizler Mutfağı” explores the rich culinary heritage of the region it calls the Five Seas – the Black Sea, Caspian Sea, Persian Gulf, Red Sea and Mediterranean. The kitchen draws on this vast geography, where Turkish cuisine sits at a crossroads of Balkan, Caucasian, Middle Eastern and Mediterranean traditions.
The menu reads as a thoughtful survey of Turkish classics and regional specialties. Cold starters include a dense, walnutty muhammara, a smooth hummus, and a tangy haydari made with strained yoghurt and Ezine white cheese. Among the hot starters, tereyağlı dana ciğer – calf’s liver seared in butter – and tereyağlı karides, butter-sautéed prawns with capsicum and garlic, are direct and satisfying. A signature, kocco kokoreç (aslanboğa), wraps seasoned lamb offal in caul fat and intestines, grilled with thyme and cumin.
Main courses lean heavily on lamb, prepared in several forms: kuzu möhre (lamb backstrap with village peppers and bulgur), pehli (lamb shank with buttered rice), and selekeli (lamb sirloin baked in a stone oven, served with butter and yoghurt). Hamsi tava – fried anchovies in cornmeal – brings the Black Sea to the plate. Desserts stay within the tradition: warm kaymaklı kadayıf, sakızlı muhallebi with mastic gum and sour cherry sauce, and a quince dessert scented with clove and pomegranate.
The restaurant’s commitment to this cuisine earned it a Michelin Bib Gourmand for 2026, a recognition of good quality, good value cooking. The dining room is straightforward, with outdoor seating available, and service is attentive without ceremony. SADE offers a grounded, generous expression of Turkish cuisine, rooted in the flavours of the Five Seas.
