The story
At Bosq in Aspen, the wilderness is not just a backdrop—it is the source. Chef and owner Barclay Dodge, a local who trained in Michelin-starred kitchens and at the legendary El Bulli, returned home to create a restaurant that cooks in direct conversation with the land. The name itself nods to the Spanish word bosque, meaning forest, and every dish reflects the forests, seasons, and stories of the surrounding Roaring Fork Valley.
The dining room on South Mill Street feels intimate and warm, with windows that frame the town and an atmosphere that mirrors the nearby mountains. This is a place to slow down, where the menu changes with the rhythm of Aspen’s seasons. Summer brings wild plums and bright greens; winter reveals preserved ingredients and earthy flavors. Foraging is central to the kitchen’s approach—Chef Dodge and his team gather wild mushrooms, spruce tips, watercress, and serviceberry branches, turning each ingredient into a bridge between the kitchen and the mountains.
Guests can choose between a 5-course “Choose Your Own” tasting menu or a Chef’s Choice 9+ course experience, both of which evolve constantly. The menu is a reflection of the season’s bounty—some ingredients foraged, others cultivated by local farms. The kitchen’s philosophy is no-waste, and the commitment to sustainability extends to the plates themselves, which come from a local potter, and the walls covered in beetle-kill pine.
The beverage program mirrors this same care. Cocktails capture the valley’s rhythm with ingredients like blue spruce in winter or nasturtium in summer. The wine list focuses on small, family-owned wineries practicing biodynamic and organic farming, each pairing chosen to harmonize with the contemporary cuisine.
Chef Barclay Dodge’s journey began in his grandmother’s kitchen and led through some of the world’s most respected restaurants. His work at Bosq earned the restaurant a Michelin star in 2023, making it Aspen’s first and only one-star recipient when the guide launched in Colorado, and it has held that star every year since. He is also a James Beard semifinalist and a DiRoNA Award winner.
Co-owner and Director of Hospitality Molly Dodge brings warmth and generosity to every guest, creating a space that feels like an extension of Aspen’s community. The team—from the sommeliers to the sous chefs—shares a deep respect for the valley, with an expert forager and mycologist in the kitchen and a wine director with experience in some of the world’s great cellars.
