The story
On a bright Austin corner, La Santa Barbacha’s food truck serves the barbacoa that siblings from Central Mexico grew up making. Their parents ran a small business dedicated to this slow-braised tradition, and after culinary school in Mexico, the family brought their craft to Texas. The truck opened in 2021 as a direct extension of that home kitchen—a place where barbacoa is not just a dish but a daily ritual of sharing food with loved ones and the Austin community.
The menu is compact and confident. Barbacoa—tender, braised beef—anchors almost every item: breakfast tacos folded with scrambled eggs, refried beans, or potatoes; classic tacos topped with cilantro and onion; and a handful of specials that push the format further. The Crispy Cheese Taco (costra de queso) grills cheese into a shell around barbacoa and chicharron, while the Quesabarbacha turns the same filling into a quesadilla. The Barbacha Chilaquiles layer green tomatillo salsa over crunchy corn chips, then top everything with barbacoa, refried beans, crema, avocado, and a choice of eggs. There is also a vegetarian Santito taco with roasted veggies and herbs, plus agua frescas like pink horchata and pineapple mint.
The siblings’ dedication to this style of Mexican cooking earned La Santa Barbacha a Bib Gourmand in the inaugural Michelin Texas Guide, an award repeated in 2025. It recognizes the kitchen’s good-quality, good-value cooking—a fitting nod to a family operation that treats barbacoa as both heritage and daily craft.
