Perched among Douglas fir, madrona, and cedar trees, The Oyster Bar on Chuckanut Drive overlooks Samish Bay and the San Juan Islands. The restaurant’s intimate, multitiered dining rooms ensure every seat has a view of the water. In warmer months, the outdoor patio on the lower level opens for al fresco dining.
The Oyster Bar began in the 1920s as a small shack selling oysters to travelers on Chuckanut Drive. Proprietors Guy and Linda Colbert took ownership in the early 1990s, transforming it into the Pacific Northwest’s premier dining experience. The seasonally inspired menu focuses on fresh seafood, steak, and vegetarian dishes, all built around locally sourced produce. The kitchen’s commitment to the region’s bounty is evident in dishes that highlight the beauty of each ingredient—perfectly cooked vegetables, salmon, halibut, duck, and venison, with sauces and preparations that land with precision.
Oysters remain the heart of the menu. The restaurant offers a variety of regional options, from the Pacific oyster (which makes up 98% of Washington’s production) to the tiny, copper-flavored Olympia, the delicate Kumamoto, and the intense European Flat. The bar’s award-winning wine list is curated to pair with the seafood, and the restaurant has held Wine Spectator’s Best of Award of Excellence since 1985—a recognition that speaks to decades of thoughtful cellaring and service.
