The Tradition of Churrasco

Since 1979, Fogo de Chão has kept the flames of the culinary art of churrasco burning. The founders, who grew up on a traditional farm in the Serra Gaucha region of southern Brazil, brought their family’s legacy of fire-roasting to the world. At the Centennial location, that same dedication to quality endures: gaucho chefs carve an endless parade of fire-roasted meats tableside, from Picanha (the prime top sirloin) to Fraldinha (bottom sirloin) and Costela (beef ribs slow-roasted for five hours). Every cut is seasoned simply with coarse salt and cooked over open flames, a technique honed over generations.

The Dining Experience

The churrasco experience here is a full immersion. Before the meats arrive, guests explore the Market Table – a vibrant spread of fresh vegetables, imported cheeses, cured meats, and Brazilian sides like pão de queijo and feijoada. For those who want variety, Bar Fogo offers Brazilian-inspired small plates and craft cocktails. The atmosphere is warm and energetic, with the scent of wood smoke and sizzling beef filling the dining room. Whether for lunch or dinner, the meal unfolds at your pace, with servers bringing cut after cut until you signal satisfaction.

Award-Worthy Wine Program

Fogo de Chão’s wine program earned a Wine Spectator Award of Excellence in 2019, a recognition of its thoughtfully curated list. The restaurant’s Founders Tribute Wine Collection features four private-label wines – a Malbec from Argentina, two red blends from Chile, and a Cabernet Sauvignon from California – each selected to complement specific cuts. For example, the Jorjão Reserva Malbec pairs beautifully with Picanha, while the O’Leão Red Blend enhances the richness of Fraldinha. The wine list also includes limited-time events, such as the VIK Wine Dinner, where premium South American wines are paired with a chef-curated menu featuring Wagyu New York Strip and Beef Ancho Bone-in Ribeye.
