The story
In Charlotte, North Carolina, Counter redefines fine dining as a full sensory performance. Awarded a Michelin star for high-quality cooking, this intimate restaurant seats just 18 guests at a U-shaped counter facing the open kitchen. The experience is built around quarterly tasting menus that Executive Chef and Owner Sam Hart calls “themes”—narrative-driven compositions that use music, art, and contemporary cuisine as vehicles for storytelling.
Each theme is a deliberate departure from the last. Past menus have explored the diverse cuisines of India and Southeast Asia under the banner Curry, celebrated the bounty of North Carolina in Terroir, and generated awareness around mental illness through Colour. Another theme, The Wall, paid tribute to the Pink Floyd album. Dishes are never repeated after a three-month run, ensuring that every visit offers a completely new encounter.
The space is designed as a blank canvas: muted concrete floors, white concrete countertops, and simple grey walls that transform with each theme’s tableware and art. Once a theme concludes, all revolving items are sustainably recycled, sold, or donated to local nonprofits.
Hart describes Counter as an incubator for rising star chefs, providing them with guidance and inspiration to open their own concepts in Charlotte. The kitchen is led by Executive Pastry Chef Faith Morley, whose work has earned her the title of Pastry Chef of the Year from Unpretentious Palate. Executive Beverage Director Michael Myers curates the wine program, which features a diverse offering of female, LGBTQ+, and minority winemakers, alongside a thoughtfully crafted non-alcoholic pairing. The wine list itself has received a Wine Spectator Best of Award of Excellence and a Star Wine List Silver Star.
Reservations are required for seatings Wednesday through Saturday. Each course is timed to a pre-set playlist, immersing guests in the theme’s narrative. The team approaches the menu “as a crime-writer might approach a plot or the way a composer might approach the second movement.” This meticulous attention to detail—from the soundscape to the plate—creates a dining event that is both personal and singular.
Counter is owned and operated as a collective effort among employees, with a mission to change the industry from within. It is a place where the region is showcased through a lens of intention and creativity, earning its place among Charlotte’s most celebrated dining destinations.
