The restaurant works with farms that care about their animals and the land, sourcing meat that is butchered in-house by a USDA-certified team. The menu changes frequently, driven by what cuts and seasonal produce are available. “Here, we let the product determine the menu,” says Chef Erik Niel. The bar program is equally thoughtful. With nearly 300 whiskeys on the shelf and a tight selection of one vodka, one rum, and one tequila, the focus is on quality and consistency.
