The story
In Chicago's West Loop, Chef Sangtae Park offers an intimate omakase experience that has earned recognition from the MICHELIN Guide. The restaurant seats just six guests per seating, at 5PM, 7PM, and 9PM, ensuring that every diner receives the chef's full attention.
Chef Sangtae Park has devoted his life to Japanese cuisine, honing his craft since his youth in Busan, South Korea. After moving to the Chicago area, he worked as a sous chef at Mirai and Japonais, then opened Badaya in Highland Park, later founding Izakaya Yume in Niles. There, he began offering diners a “chef’s choice” experience focused on Edomae-style sushi. Encouraged by the response, he opened Omakase Yume—yume meaning “dream” in Japanese—to realize his aspiration of making guests happy through his food.
The tasting menu comprises 16 courses, including appetizers, daily sushi prepared by the chef, seasonal specials, and dessert. The menu changes daily based on the chef's selection of the best available product. Chef Sangtae respects the traditional philosophy of sushi, where every detail—from the quality, temperature, and formation of the rice (shari) to the slicing and seasoning of the fish (neta)—is critical. He also incorporates his own flavor combinations, reflecting his Korean heritage.
For those who wish to enhance their meal, a wine and sake pairing is offered. The restaurant's atmosphere is calm and focused, allowing the precision of each piece to speak for itself.
