The story
Oriole is a contemporary-American restaurant in Chicago's West Loop, built around the ever-evolving tasting menu of Executive Chef and Owner Noah Sandoval. Since opening in 2016, the kitchen has consistently earned two Michelin stars—a recognition that speaks to the precision and creativity of each course. Sandoval was named Best Chef: Great Lakes by the James Beard Foundation in 2025 and one of Food & Wine’s Best New Chefs in 2017. The menu changes with the seasons, offering an extended tasting experience that balances refinement with a sense of discovery.
Chef de Cuisine Colin McHugh works alongside Executive Pastry Chef Kyra Farkas and Executive Sous Chef Evelyn Aloupas to bring Sandoval’s vision to life. The front-of-house team is led by General Manager and Wine Director Emily Rosenfeld, whose deep wine knowledge shapes the pairing selections. Bar Director Maddie Balintona crafts cocktails that complement the meal, while Sommelier and Dining Room Manager Nathan Wyka oversees the flow of service. Together, they create a setting that is polished yet welcoming.
Emily Rosenfeld curates the wine list with an old‑world sensibility and a focus on white wines. Three pairing options are available: a standard wine pairing, a reserve selection of older vintages and rare bottles, and a spirit‑free pairing of creative non‑alcoholic beverages. Guests may also bring their own bottles (limit two, subject to corkage). The beverage program is designed to elevate the seasonal, contemporary cuisine without overshadowing it.
