The story
What began as late-night pop-ups and backyard grills between Marcos Ascencio and Oliver Poilevey has become a Fulton Market staple. Their mission: bring the authentic, high-energy spirit of Mexico City to Chicago. Today, Taqueria Chingón channels that same energy into serious cooking with zero pretension.
The taqueria feels like a neighborhood spot—welcoming, unpretentious, but with a kitchen that takes its craft seriously. Handmade tortillas are the foundation, and the open kitchen lets you watch the trompo spin. It’s the kind of place where you can stop in for a quick taco or linger over a meal with friends.
The Al Pastor is the soul of the operation: Premium Berkshire pork shoulder marinated in traditional spices, carved thin from the trompo, and finished with pineapple. The Duck Carnitas is a standout—confit duck topped with crispy chicharron, balanced by a sweet date puree and spicy sunchoke-habanero salsa. For something more substantial, the Skirt Steak taco pairs grilled medium-rare steak with a silky avocado mousse and house-made chimichurri.
Other choices include the Chorizo Verde, Gobernador with shrimp, and a Squash taco with butternut squash and goat cheese crema. The menu also features quesadillas, tortas, burritos, and a full breakfast lineup.
In 2026, Taqueria Chingón earned a Michelin Bib Gourmand—an award for good quality, good value cooking. It’s a fitting nod to a kitchen that balances chef-driven innovation with the soul of a classic taqueria. The Michelin-recognized Mexican cuisine here is bold, direct, and deeply satisfying.
