The story
At Ramen & Tsukemen TAO in Cypress, the bowl is a direct line to Hokkaido. Owner and chef Toshimasa Sano spent ten years training at Tsujita in Tokyo, the revered artisan ramen brand once called "the king of tonkotsu ramen in Los Angeles" by critic Jonathan Gold. But rather than replicate the tonkotsu of his training, Sano opened his own shop with a different focus: miso.
The menu centers on two styles: White Miso Ramen, rooted in Hokkaido's rich food culture, and Red Miso Ramen, a Tokyo staple. Both are built on an intensely flavored broth that simmers for 40 hours. The noodles are sourced from Kobayashi Seimen, a brand also from Hokkaido, and paired fresh to each order. The result is a bowl of Japanese cuisine that is both deliberate and deeply satisfying.
This careful approach earned Ramen & Tsukemen TAO a Michelin Bib Gourmand in 2026, an award for good quality, good value cooking. It is a fitting nod to a shop that balances technical skill with an accessible, counter-dining experience. For those in Orange County seeking ramen with real depth, this is a destination worth seeking out.
