The menu draws on ingredients from regional farms, ranches, and the Gulf of Mexico. The Rare Steak program is a highlight, featuring Prime Beef, Texas Wagyu, and Japanese A5 Wagyu, while a dedicated sushi menu and chilled seafood display offer lighter, ocean-driven options. A dessert bar, where pastry chefs work in open view, and a selection of signature craft cocktails and an extensive wine list round out the offering.
The team behind Crown Block brings considerable experience. Elizabeth Blau, founder and CEO of Blau + Associates, is recognized for transforming iconic properties such as the Rainbow Room at Rockefeller Center and the restaurant portfolios at Bellagio and Wynn. She operates the restaurant with her husband, chef Kim Canteenwalla, who brings over 30 years of international culinary leadership from Singapore, Dubai, and Las Vegas. Executive Chef John Pineda and Executive Pastry Chef Lizbeth Ramirez lead the kitchen, while Executive Sushi Chef Kesao Otake oversees the sushi program.
