The story
Tucked away from the bustle of Dallas’s historic Deep Ellum neighborhood, Tatsu Dallas is an intimate space where Michelin-starred Japanese hospitality and the art of Edomae sushi seek to transport you to another world. The restaurant earned a Michelin star for its high-quality cooking, a recognition woven into every detail of the experience.
Guests indulge in a variety of seasonal dishes, expertly curated by Executive Chef and Owner Tatsuya Sekiguchi. Each meal is served omakase style and consists of one or two appetizers, thirteen to fifteen pieces of nigiri-style sushi, a hand roll, miso soup, and dessert. Two seatings are offered five nights a week, with each meal lasting approximately one hour and forty-five minutes. Guests are encouraged to interact with Chef Tatsu and witness the art of Edomae sushi up close and in person.
Chef Tatsuya Sekiguchi grew up watching his father prepare traditional Edomae-style sushi and sashimi in his family’s nearly 100-year-old restaurant in Hasuda City, Saitama, Japan. In 2001, he moved to New York City, where his skills were quickly noticed by legendary Sushi Chef Naomichi Yasuda, who appointed Tatsu Executive Chef of his Michelin-starred restaurant Sushi Yasuda. Under Tatsu’s leadership, Yasuda was named one of the 10 best restaurants in New York City by Zagat in 2013. After a decade at the helm, Chef Tatsu set out on his own with a residency at Omakase Room in the West Village, before opening his first restaurant in Dallas.
Sous Chef Yoji Ishii, a former art student from Osaka, Japan, was so struck by Chef Tatsu’s approach to Edomae sushi that he traded pencils for knives. His passion and skill are evident in every move. Okami Hiroko Sekiguchi, Chef Tatsu’s wife, brings over two decades of restaurant operating experience to ensure the highest standards of Japanese hospitality, a role traditionally reserved for the owner’s wife in Japan.
Hidden inside Tatsu Dallas is an intimate, cherry wood bar called Kirameki, where Lead Mixologist Crystal Dirdon-Cooper crafts cocktails as inviting as the décor. Guests enjoy eclectic, signature cocktails designed to complement the seasonality of Chef Tatsu’s menu, alongside flawlessly executed classics with a Japanese flair. A selection of maki rolls, prepared fresh by Sous Chef Yoji Ishii, is available for those connecting with friends in the ambiance of Kirameki.
