The story
At Alma Fonda Fina in Denver, Chef Johnny Curiel makes his solo restaurant debut with a deeply personal vision: to share the beauty of Mexican culture through food. The name itself captures the spirit—Alma means soul, while Fonda Fina describes a humble neighborhood spot for friends and family. This contemporary Mexican restaurant is a direct reflection of Curiel’s heritage and decades of experience.
Born into a family of chefs in Guadalajara, Mexico, Curiel began washing dishes in his father’s restaurant at age 14. At 18, he set out on a culinary immersion across Mexico, learning from street vendors, bustling restaurants, and abuelas in their home kitchens. Those travels taught him age-old techniques and the wisdom of generations. He later cooked with Chef Richard Sandoval in cities from Washington DC to Oaxaca, then established himself in Denver’s scene working with Chef Troy Guard. After years of consulting, Curiel earned his father’s approval and opened Alma Fonda Fina.
The restaurant’s contemporary Mexican fare pays homage to Curiel’s rich cultural heritage while pushing boundaries of taste and tradition. The menu is built on integrity and the culturally rich experiences that defined his journey. Alma Fonda Fina earned a Michelin star for its high-quality cooking, a recognition that speaks to the precision and soul in every dish. The kitchen also accommodates gluten-free diners with a select menu, though the space is not entirely gluten-free.
The dining room balances warmth and refinement, embodying the welcoming spirit of a fonda fina. Reservations are recommended and open 60 days in advance at 8am, with a time limit of 1 hour 45 minutes for parties of two. Walk-ins are accepted when possible, and the patio operates on a first-come, first-served basis from May through October.
