The story
Kawa Ni describes itself as a nontraditional and playful Japanese izakaya, inspired by Chef Bill Taibe’s travels and love of food. The word izakaya translates to “stay-drink-place,” and that spirit defines the experience: a spot to grab a drink, settle in, and get comfortable.
Chef Bill Taibe’s career began at a local butcher shop after school, eventually leading him to open LeFarm in Westport, Connecticut in 2009. Kawa Ni first opened there in 2014, and in 2023 the concept expanded to Denver. The Denver location quickly earned recognition from Michelin in 2024, a testament to the kitchen’s consistency and creativity.
While raw fish appears on the menu, Kawa Ni’s focus is on dumplings, noodle bowls, and rice bowls. Menus evolve seasonally, reflecting fresh ingredients and the team’s inspiration. The drink list is extensive, with whiskey, sake, and carefully crafted cocktails that complement the bold flavors.
The goal is a warm, inviting space for both guests and staff. A 20% service charge is added to every check and shared across the entire front- and back-of-house team—a practice Taibe championed through his “Kitchen Share” program, setting a standard for wage equity in the industry.
