Lunch at Mercantile offers two distinct experiences to suit your day. In the bustling café, guests enjoy fresh, vibrant fare at a relaxed counter-service pace. For a more composed meal, the dining room presents a thoughtfully curated two-course experience.
Dinner is an invitation to gather and connect over seasonal cuisine, with the same attention to ingredient sourcing and technique. The American cuisine here shifts with the seasons, so each visit brings something new—root vegetables in winter, peak tomatoes in summer, and always a reflection of what Colorado growers and ranchers have to offer.
For a front-row view into the heart of the kitchen, the intimate five-person marble Chef’s Counter offers a prepaid, multi-course experience at $135 per person. It’s a chance to watch the team work while tasting dishes that change with the market.
