The story
The Ginger Pig began not in a restaurant, but in a tiny kitchen in Beijing, where a young Natascha Hess learned to grind pork with a cleaver and make dumplings from scratch. Her teacher was Nalu, her Chinese “Mom,” who showed her the power of simple, fresh ingredients. That lesson became the foundation of a food truck that hit the streets in 2016, and eventually, a permanent home on Lowell Boulevard in Denver.
Chef Hess’s vision is rooted in the flavors she discovered backpacking through Tokyo, Hong Kong, and Bangkok, blended with the techniques Nalu taught her. The result is a style of Asian cuisine that is both authentic and personal—handcrafted dumplings, sizzling Korean fried chicken, and Chinese smashed cucumber salad dressed in house Sichuan vinaigrette. The menu balances spicy, sweet, salty, and sour across a range of dishes, from bento boxes to classic meals like the Chinese 9-spice chicken (La Zi Ji) and miso-glazed eggplant.
The restaurant’s dedication to bold flavor and community has earned it the prestigious Michelin Bib Gourmand Award in 2023, 2024, and 2025—a recognition of good quality, good value cooking. The Ginger Pig also operates a second location in Boulder, bringing the same creative Asian fusion back to the city where the food truck first gained its following at the Boulder Farmers Market.
In Denver, the space has become a gathering place for locals and visitors alike. The atmosphere is welcoming and unpretentious, with outdoor seating available and a full cocktail program.
