The story
In a city known for its mile-high altitude and mountain views, The Wolf's Tailor has carved out a singular place in Denver's dining landscape. The restaurant’s ethos, stated plainly on its website, is “in defense of the maker”—a commitment to honoring the hands and ideas that bring a meal from concept to table. The name itself is a playful, cautionary fable: a wolf in sheep’s clothing, a reminder that appearances can deceive, and that the best things are not always what they seem.
The kitchen operates as a laboratory where inspiration, drawn from memory and travel, is stitched into form. The contemporary cuisine here is not merely cooked but constructed, each dish a deliberate creation meant to guide guests through the chef’s own exploration. The result is a tasting menu that feels both intellectually rigorous and deeply personal, rooted in technique but never cold.
Sustainability is not an afterthought but a structural principle. The restaurant runs on a zero-waste mentality, recycling bread waste into sourdough gochujang, contract-farming heirloom wheat on regeneratively farmed land, and sourcing ingredients through certified sustainable foraging programs. An on-site pollinator garden supports local ecology, while one percent of sales is donated to Zero Food Print, a fund that actively supports regenerative farmland. Even the bar program reflects this ethos: a collaboration with Haykin Family Cider uses locally cryo-concentrated apple juice to reduce reliance on imported citrus.
This commitment to craft and planet has not gone unnoticed. The Wolf’s Tailor holds two Michelin stars, awarded for outstanding cooking that meets the guide’s five universal criteria: quality of ingredients, harmony of flavors, mastery of techniques, personality of the chef, and consistency. It also holds a Michelin Green Star, a recognition of its exceptional sustainable and eco-friendly culinary practices—from supply chain management to waste reduction.
Dinner is served Tuesday through Sunday from 5 PM to 9 PM, and the space offers outdoor seating, wheelchair access, and the option for takeaway. Private parties can also be accommodated. The wine list is noted for its interesting selections, complementing the thoughtful, ingredient-driven contemporary cuisine.
