The story
At Goosefeather, Chef Dale Talde offers a modern take on Cantonese cuisine, drawing from the flavors of Hong Kong with an emphasis on fresh, seasonal ingredients. The menu highlights noodles, Cantonese barbecue, and dumplings, but Talde—a James Beard-nominated chef and familiar face from Top Chef—also introduces unexpected elements like dry-aged beef and black truffles.
The restaurant is housed in the historic King Mansion at the Tarrytown House Estate, a setting that includes four dining rooms, a nine-seat bar, and both indoor and outdoor lounges. Fire pits warm the outdoor lounge on colder nights, while two terraces, a garden, and a front lawn provide al fresco seating in warmer months. The name itself comes from an ancient Chinese proverb about thoughtful gift-giving, a tradition dating back to the Tang Dynasty.
Dishes range from dim sum like Dry-Aged Beef Potstickers with Chinese mustard horseradish to larger plates such as the Aged Crown of Duck served with Hong Kong toast and plum glaze. The brunch menu features items like Hong Kong Duck French Toast and a Longanisa Sausage, Egg & Cheese sandwich. A .50 cent surcharge on each food item is distributed among the kitchen staff.
