The story
At the corner of Warburton Avenue and Spring Street in Hastings-on-Hudson, Boro6 Wine Bar channels the spirit of a European taverna. The space is anchored by a 40-foot marble horseshoe bar and lined with cozy banquettes, creating an atmosphere that is both intimate and welcoming. It is the kind of place where you can stop in for a quick glass or settle in for the entire evening.
This approach—good quality, good value cooking in relaxed surroundings—earned Boro6 a Michelin Bib Gourmand award, a recognition that aligns perfectly with the restaurant's core philosophy. The restaurant is the project of husband-and-wife team Paul Molakides and Jennifer Aaronson, who brought the concept home after years of traveling and dining through Europe.
The idea for Boro6 was born abroad. While traveling through Europe with friends and family, Paul and Jennifer were consistently drawn to small village tavernas serving local cheeses, sausages, crusty bread, and uncomplicated wines. Those simple spots defined ideal dining for them: pure, fresh ingredients served simply in an unrushed atmosphere.
Paul Molakides brings deep front-of-house experience from restaurants including Eleven Madison Park and BLT Steak. Jennifer Aaronson, a graduate of the Cambridge School of Culinary Arts, worked alongside Suzanne Goin and later spent 14 years at Martha Stewart Living as Vice President and Editorial Director of Food and Entertaining. Together, they have created a place that feels like a postcard you can walk back into.
Boro6 serves a Mediterranean menu of salads, toasts, small bites, fresh locally made pastas, braised meats, roasted fish, and vegetables. The wine program is a particular strength, with over 40 wines by the glass, including a deep selection of natural, organic, and biodynamic wines, as well as orange wines. The bar also offers cocktails, craft beers, and a full non-alcoholic menu.
The restaurant is open for lunch Tuesday through Friday, dinner Tuesday through Saturday, and brunch on weekends. It is closed on Mondays.
