The story
Just north of Healdsburg, in the small town of Geyserville, Diavola occupies a historic landmark that dates back to the 1900s. Chef and owner Dino Bugica spent over a decade in Italy, mastering the art of butchery and the philosophy of cucina povera—using the most basic, locally available ingredients with recipes perfected over centuries. That ethos is alive here: a daily changing menu built around carefully sourced meats, fish, and produce from local farms, ranches, and fisheries, guided by sustainability.
Diavola’s heart is its house-cured salumi and sausages, made in-house and showcased on an antipasti board alongside local vegetables and imported cheeses. The wood-burning oven turns out authentic Neapolitan-style pizzas—thin, blistered, and deeply flavorful. The Margherita, with Mozzarella di Bufala and basil, is a classic. Seasonal specials like the Dictator, topped with marinated short rib, kimchi, and serrano chiles, show the kitchen’s creative, cross-cultural side. Pasta is handmade, from chestnut gnocchi with local squash to spaghetti Bolognese with chanterelles.
The atmosphere is rustic and welcoming, with outdoor seating and a private room available. The Michelin inspectors have recognized Diavola for its consistent quality, earning a Michelin Recommended distinction in 2026. It’s a place where Italian tradition meets Sonoma County’s bounty—no fuss, just honest cooking from a chef who learned his craft on the other side of the Atlantic.
