The story
Little’s Oyster Bar, located in the heart of Houston’s Montrose neighborhood, is the first chef-driven concept from the legendary Pappas Restaurant group. Under the direction of Executive Chef Jason Ryczek, the restaurant has quickly become a destination for decadent, hand-selected seafood. The restaurant’s 2024 Wine Spectator Best of Award of Excellence underscores the seriousness of its beverage program, which a Certified Sommelier has crafted with a focus on European wines and bubbles.
The vintage exterior signage, repainted and restored, nods to the location’s opening in 1987 as Little Pappas Seafood House. Chef Ryczek arrived from the Bay Area to lead this new concept, bringing a reverence for sustainable seafood that he honed at prestigious West Coast restaurants. His menu celebrates Gulf Coast ingredients with a thoughtful, reverent touch—elevating regional seafood without pretension. The team describes the atmosphere as “fine dining but not stuffy,” comfortable and welcoming, just like Houston itself.
The seasonally changing menu offers a rotating selection of oysters, shellfish, and caviar. Expect dishes such as dry-aged tuna crudo, baked Gulf oysters with blue crab and absinthe, and a lobster and gnocchi plate with blistered cherry tomatoes. Mains include chicken-fried American red snapper with sauce ravigote, Texas redfish with Castelvetrano olive salsa, and Gulf grouper with radish beurre blanc. The wine list, which earned the Wine Spectator award, pairs perfectly with the caviar service or a classic martini. Chef Ryczek’s treatment of seafood is both thoughtful and adventurous, making Little’s Oyster Bar a standout in Houston’s diverse dining scene.
