The story
In Houston's historic Heights neighborhood, Truth BBQ does things the hard way. Pitmaster Leonard Botello IV and his team cook for eighteen hours on wood-burning offset smokers, making everything from scratch daily. The result is authentic Central Texas-style barbecue that has earned a loyal following and critical acclaim.
Botello opened his first Truth BBQ in a small shack off a rural highway between Austin and Houston in 2015. Armed with a used Klose pit and no reputation, he surprised the barbecue world when Texas Monthly named his spot #10 on its Top 50 Texas BBQ Joints list in 2017. By 2021, Truth had climbed to the top 3. The Houston location opened in January 2019, where Botello continues to push boundaries with offerings like Carolina-style whole hog, boudin smoked sausage, and pastrami brisket.
The commitment to craft is evident in every detail. Sausage is made in-house daily—most days, you can watch it being made while waiting in line. Sides and desserts are prepared from scratch. Botello, who spent years sleeping next to his smokers before serving the line that queued outside, describes his job simply: to honor the legacy of Texas barbecue while pushing the industry forward with a younger generation of cooks.
Truth BBQ has maintained a place in Texas Monthly's Top 10 for ten consecutive years and earned a Michelin Bib Gourmand in the Texas guide's inaugural 2024 edition, an honor it received again in 2025. The restaurant also offers barbecue classes for those who want to learn from one of Texas' most acclaimed pitmasters.
