The story
Set within the rolling vineyards of JUSTIN Estate in Paso Robles, The Restaurant at JUSTIN offers an experience rooted in the land. The culinary team draws almost exclusively from the estate’s own 26-acre farmstead, transforming the freshest ingredients into a seasonal multicourse dinner tasting menu. The cuisine is Californian and Contemporary, with each dish designed to complement the winery’s award-winning wine list—featuring iconic bottles like the Bordeaux-style ISOSCELES.
The setting is as thoughtful as the food. From the elegant dining room with air conditioning to the patio with outdoor seating, every space frames the views of the vineyard-draped hills. This is a place where the connection between vine, table, and landscape feels immediate and genuine.
Executive Chef Rachel Haggstrom leads the kitchen, and her cooking has earned the restaurant a Michelin star for high quality. The recognition speaks to a kitchen that respects simplicity: vegetables just picked, proteins handled with precision, and flavors that speak clearly of the place they come from. The result is a tasting menu that changes with the seasons, always tethered to what the farmstead offers that week.
Parking is available on site, and the experience is best reserved in advance at the estate tasting room. For those who want to linger, the property also includes accommodations, making it possible to wake up in the middle of the Paso Robles wine country and do it all again the next day.
