The story
Opened in early 2018, Jailbreak Brewing & Foodworks was designed as a natural extension of the Laurel taproom. The space adds substantial indoor seating and an open kitchen where guests can watch the chefs at work. A centerpiece of the room is the Earthstone open-flame pizza oven, used to craft the malt-sourdough crusts that appear on the menu.
The restaurant’s ethos is grounded in honest, simple ingredients. Much of the menu—from wing sauces and marinades to that pizza dough—is made from scratch daily. The kitchen team sources meat and produce from local farms near their Laurel, Maryland location, keeping the American cuisine rooted in the region.
The culinary team includes Chef Janny, Chef Anthony, Chef Michael, Chef Juan, Chef Chris, Chef Vidal, Chef Rob, Chef Joseph, and Chef Harun. Each brings a distinct personality to the kitchen, but all share a focus on straightforward, satisfying food. As the restaurant notes, "the significance of our staff and culture cannot be understated."
A standout feature is the six state-of-the-art DRYAGER™ cabinets, where the team ages a rotating selection of premium proteins—including beef and fish. Guests can build their own butcher board from these offerings, making the Dry Age Program a game changer for meat and fish at the restaurant.
Jailbreak Brewing & Foodworks earned a Wine Spectator Award of Excellence in 2025, a nod to its thoughtfully curated beverage program. The casual, welcoming atmosphere is enhanced by a beautiful flower wall and a view of the Dry Ager units, giving diners a peek into the craft behind their meal. Whether for lunch, dinner, or takeaway, the Laurel restaurant balances brewery culture with serious, from-scratch cooking.
