The story
Across from Grand Central Market, Maccheroni Republic is a rustic Italian-American osteria that makes its own pasta in-house. The restaurant operates a pastificio (pasta factory) on site, using organic flour and traditional techniques. As their own site puts it, “the wind of passion meets the knowledge of one of the most expert pasta makers on earth.” This is not a place that simply serves Italian-American cuisine—it is a place where that cuisine is built from scratch, daily.
The Bib Gourmand award from Michelin recognizes good quality, good value cooking. The guide’s inspectors describe the space as “every inch the classic trattoria,” with tall mirrors, tiled walls, and tin ceilings. They note the array of excellent handmade pastas, singling out the bigoli della nonna with an angus-and-sausage ragout. Alongside the pasta, they recommend the olive oil bread paired with polpettine di gamberi (shrimp meatballs), and a creamy affogato to finish.
