In downtown Los Angeles, Sushi Kaneyoshi offers two distinct omakase experiences, each a study in precision and tradition. The restaurant earned a Michelin star for its unwavering commitment to the art of Edomae sushi, a recognition that speaks to the exacting standards maintained at every level.
The regular omakase room presents a modern adaptation of traditional sushi, while the recently unveiled Premium Room takes a more purist approach. Opened in March 2025, this intimate sanctum seats only eight guests and follows strictly traditional Edomae-style techniques, using a more elevated grade of seasonal ingredients. Here, Oyakata Inoue Yoshiyuki’s ethos is stricter, the execution more refined—a space where every detail is sharpened and every technique honed.
The focus on Hikarimono—the “shiny things” of the sea—is central to the experience. Fish like Nishin, Kannuki, and Kohada are prepared as shimmering relics, their silver skin glinting like moonlight on water. Each piece is a fleeting miracle, dissolving on the tongue yet leaving something everlasting behind. This is sushi at its most exacting, where the essence of the ocean is distilled into its purest form.
