The menu pays homage to the vibrant flavors of Asia, evolving continually with the seasons and embracing fresh, seasonal produce. The kitchen’s precision is evident in dishes such as the Five Spice Dry-Aged Duck, cured in a five-spice wet brine for 12 hours and dry-aged for at least seven days to concentrate flavor and tenderness. It is finished with smoked salt and served with sour red beet purée and a fermented golden beet and lemongrass jam. The Tomato Salad is a study in layering, featuring heirloom tomatoes with a tomato dashi gelée, whipped shiro miso tofu, and a tableside finish of tomato koji vinaigrette and Thai basil oil.
