The story
In the historic La Palma Building in Coral Gables, Shingo is an intimate 14-seat omakase experience helmed by award-winning Sushi Chef Shingo Akikuni. The restaurant’s philosophy is rooted in omotenashi—the Japanese expression for true hospitality—extending an authentic spirit through every dish and interaction.
Chef Akikuni describes each piece of nigiri as “an ongoing conversation between nature, craft, and culture.” His approach honors the entire sushi ecosystem, from the farmers who cultivate seasonal ingredients in Florida and Japan to the fishermen whose early morning labor determines the quality of each catch. Artisans craft the tableware—what Chef calls “the kimono for sushi”—while couriers ensure the cold chain from Tokyo to Coral Gables remains seamless. “I dedicate my craft to honor every part of the sushi ecosystem—from sea to service,” he says.
The omakase menu showcases seasonal ingredients sourced locally in Florida and throughout Japan. The dining room’s counter seating places guests directly in front of the chef, making each meal a personal encounter with the craft. This dedication to precision and hospitality earned Shingo a Michelin star, recognizing its high-quality Japanese cooking in Miami.
