At the core of his craft are two distinct types of sushi rice: one made with Akazu (red vinegar) and another with Yonezu (white rice vinegar). Both are prepared fresh every two hours to ensure the best possible texture and flavor.
During a recent trip to Japan, Chef Yasu and his wife connected with family to source the highest quality fish vendors, as well as handcrafted dinnerware and decor. Every detail—from the tableware to the atmosphere—is chosen to make dining at Sushi Yasu Tanaka feel authentic and intentional.
