The room first opened in 1958 as a cocktail lounge and jazz haven. Nearly sixty-five years later, Chef Tristan Brandt and his team reimagined the space. Brandt, formerly the youngest two-star chef in Germany, made his U.S. debut here in December 2022. His cooking draws deeply on experience in Michelin-starred kitchens across Europe and Asia, resulting in a cuisine that blends global techniques with local Florida ingredients.
With the arrival of Chef de Cuisine Logan McNeil, the restaurant unveils a 7-course tasting menu. The opulence of French culinary heritage meets umami-rich Asian flavors in a rhythm that builds from course to course. Dishes highlight homegrown Florida produce—from the vibrance of oranges to the sweetness of persimmons and the warmth of chestnut mushrooms.
